What Ingredients Do I Need to Make Mediterranean Cauliflower Rice?
- olive oil
- frozen or fresh cauliflower rice
- onion
- minced garlic
- lemon juice and zest
- chicken broth
- fresh parsley minced
- Spices: dill, turmeric, bay leaf
- salt to taste
Follow these steps:
Sauté the onion in the olive oil until soft. Stir in the minced garlic and sauté a few minutes more. Add the frozen cauliflower rice and chicken broth, and then cover with a lid and cook on medium high heat for 5 minutes, stirring occasionally to break up the rice.
Once the cauliflower rice is heated through, sprinkle with the dried dill, turmeric and salt. Simmer the mixture a couple minutes more. Toss the rice with fresh lemon juice, lemon zest and fresh parsley before serving.
