Mediterranean Cauliflower Rice

Lemony Greek-flavored cauliflower rice.

Ingredients
  

  • 2 tablespoons olive oil
  • 4 cups frozen or fresh cauliflower rice
  • ½ onion diced fine
  • 1 garlic clove
  • 1 small lemon + a teaspoon of zest
  • cup chicken broth
  • 6 tablespoons fresh parsley minced
  • 1 teaspoon dill
  • 1 teaspoon turmeric
  • 1 bay leaf

Method
 

  1. Sauté the onion in the olive oil until soft. Stir in the minced garlic and sauté a few minutes more. Add the frozen cauliflower rice and chicken broth, and then cover with a lid and cook on medium high heat for 5 minutes, stirring occasionally to break up the rice.
  2. Once the cauliflower rice is heated through, sprinkle with the dried dill, turmeric and salt. Simmer the mixture a couple minutes more. Toss the rice with fresh lemon juice, lemon zest and fresh parsley before serving.
