Kourabia (Armenian Shortbread Cookie) is a melt-in-your mouth, buttery, crumbly cookies are the perfect holiday treat. And with just a few ingredients needed, you will come back to this recipe time and time again. These were one of my brother's favorite cookies, and I recently discovered my sister loves them too!
What ingredients do I need for Kourabia?
- Clarified Butter: Sometimes described as liquid gold, clarified butter has been stripped of its milk solids and water content.
- Flour: Regular all-purpose white flour.
- Sugar: This recipe uses regular granulated white sugar.
- Halved blanched almonds: To make your own, pour boiling water over almonds and let soak for 2-3 minutes before draining. Then pinch or slide off the skin. Slice almonds in half.
Directions:
If you have made your own clarified butter, you will want to stick it in the refrigerator for about 30-60 minutes until it is firm. Then with a stand mixer, combine the sugar and butter together and mix thoroughly.
Add flour and mix thoroughly again.
Chill dough in parchment paper for 30 minutes before handling.
Take a small egg-size shape of dough and roll into about a 4 inch rope. Then shape the rope into a circle and press a halved almond where the rope connects. These cookies are also traditionally made into "S" shape cookies.
Bake at 300 degrees Fahrenheit for 17-20 minutes.
Let cookie rest on cookie sheet until completely cool or they will crumble apart.
