Mediterranean Salsa

Fresh and flavorful Mediterranean salsa made with tomatoes, kalamata olives, feta, herbs, and a zesty dressing. Perfect as a dip, topping, or healthy side dish!

Ingredients
  

  • 2 cups fresh diced tomatoes
  • ½ cup kalamata olives chopped
  • ½ cup feta cheese crumbles
  • ½ teaspoon salt
  • ½ teaspoon Aleppo pepper
  • ¼ teaspoon black pepper
  • ¼ teaspoon fresh minced garlic
  • 2 tablespoons fresh minced basil
  • 3 tablespoons fresh minced parsley
  • 2 tablespoon red wine vinegar
  • 2 tablespoon lemon juice
  • 3 tablespoons extra virgin olive oil
  • ½ teaspoon sugar

Method
 

  1. Combine the tomatoes, kalamata olives, and feta cheese in a medium bowl.
  2. In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, salt, sugar, Aleppo pepper, black pepper, garlic, basil, and parsley.
  3. Drizzle the dressing over the tomato mixture and toss gently to combine.
  4. Serve immediately or refrigerate for up to 2 hours to let the flavors meld.
