Method
- Warm the olive oil in a large pot. Then add the onion, garlic and sausage. If using uncooked sausage, remove the casing and then brown the sausage. If using fully-cooked smoked chicken sausage (like kielbasa), then just sauté a few minutes.
- Stir in the Italian seasoning until the spices become fragrant. Add vegetable broth, diced tomatoes, wine (optional), sugar, salt and pepper. Bring mixture to a boil.
- Add the frozen vegetables to the boiling mixture. When it starts to boil again, lower the temperature so that your soup is simmering (not too low).
- Add the Ditalini pasta and continue simmering until the pasta is al dente.
Notes
Ladle the soup into bowls and garnish with grated parmesan cheese and fresh chopped parsley (if desired).
