Vegetarian Chi Kofte

Healthy red lentil and bulgur vegetarian dish that tastes surprisingly like its meat counterpart!

Ingredients
  

  • 3 cups of water
  • 1 cup red lentils
  • 1 cup of medium ground bulgur #2 coarseness
  • 1 can diced or crushed tomatoes 14.5 oz
  • 4 tablespoons of tomato paste
  • ¼ cup finely diced bell pepper any color
  • 2-4 tablespoons of olive oil
  • 2-4 tablespoons of melted butter or use all olive oil, if wanting to prepare this vegan
  • 1 ¾ teaspoons salt
  • ½ teaspoon black pepper
  • 1 ½ teaspoons allspice
  • 1 teaspoon of sugar
  • Grape leaves for serving

Instructions
 

  • Combine lentils with 3 cups of water, olive oil and 1 teaspoon of salt and bring to boil. Reduce heat and simmer for 30 minutes, covered, stirring occasionally, to break down the lentils.
  • Meanwhile, chop bell pepper into very fine pieces.
  • In a bowl combine the following ingredients: bulgur, chopped bell pepper, diced tomatoes, tomato paste, melted butter, remaining salt, pepper, allspice and sugar. When lentils are soft and mushy, pour the mixture over the rest of the ingredients in the bowl and stir together well.
  • Chill the Vegetarian Chi Kofte for at least two hours and then serve alongside a plate of grape leaves. Place a spoonful of the kofte and wrap loosely in a grape leaf to eat.

Notes

Serve Vegetarian Chi Kofte with a side of grape leaves.
