Orange Cardamom Gingerbread Loaf

Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 ½ teaspoons ground ginger
  • 1 ½ teaspoons ground cinnamon
  • 1 ½ teaspoons ground cardamom
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • ¼ cup unsulphured or dark molasses
  • 1 cup buttermilk
  • ½ cup light olive oil
  • ¾ cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest
  • ½ cup raisins
  • Orange Powdered Sugar Glaze
  • 2 tablespoons fresh orange juice
  • 2 tablespoons orange zest
  • 1 teaspoon evaporated milk
  • 1 - 1 ¼ cup powdered sugar

Instructions
 

  • Mix together the dry ingredients. In a separate bowl, mix together the wet ingredients.
  • Make a well in the center of the dry ingredients and then add the wet ingredients.
  • Mix the wet and dry ingredients together until just barely blended.
  • Spray a loaf pan with non-stick cooking spray. Pour the batter into a bread loaf pan. Bake in a 350 degree Fahrenheit oven for 50-55 minutes, or until a toothpick comes out clean.
  • Whisk together the ingredients for the orange glaze. Then pour over the cooled loaf.

Notes

This definitely tastes as good as it smells!
