Mediterranean Cauliflower Rice

If you love greek lemon rice, but want a carb-free option, this is your fix! Lemony, herby, fluffy "rice" that counts as eating another serving of veggies. You might want to serve this alongside a skewer of shish kebab or a mediterranean salad.

What Ingredients Do I Need to Make Mediterranean Cauliflower Rice?

  • olive oil
  • frozen or fresh cauliflower rice
  • onion
  • minced garlic
  • lemon juice and zest
  • chicken broth
  • fresh parsley minced
  • Spices: dillturmericbay leaf
  • salt to taste

How Do I Make Mediterranean Cauliflower Rice?

Sauté the onion in the olive oil until soft. Stir in the minced garlic and sauté a few minutes more. Add the frozen cauliflower rice and chicken broth, and then cover with a lid and cook on medium high heat for 5 minutes, stirring occasionally to break up the rice.

Once the cauliflower rice is heated through, sprinkle with the dried dill, turmeric and salt. Simmer the mixture a couple minutes more.  Toss the rice with fresh lemon juice, lemon zest and fresh parsley before serving.
